Barnboard, if original, has no stain or finish on it. The rougher the surface the more stain is going to be absorbed and therefore the darker it will be. Even a neutral stain such as poplar or ash, will impart significant color change. I'm not sure if I have your question correct since you cannot restore wood, only the finish on it.
